MarkÂs Arkansas Barbecue Sauce

Two of the most distinct styles of BBQ sauce are Memphis Style BBQ and Texas BBQ.

Memphis flavor is a little on the "tangy" and sweet side, while the Texas flavor can be a little more spicy. Arkansas is situated between Memphis, TN and Texas so we get the best of both worlds when it comes to BBQ. This is a recipe for BBQ sauce that is a combination of Memphis and Texas flavors. To truly combine the flavors, use hickory and mesquite wood when you smoke the meat.

1 ½ cups of butter

2 ½ tablespoons of minced garlic

2 ½ cups of minces onion

10 cups of white vinegar

10 cups of tomato paste

2 ½ cups of Worcestershire sauce

3 ½ tablespoons of salt

2 tablespoons of black pepper

1 1/4 tablespoons cayenne pepper

1 ½ cups of brown sugar

2 ½ cups of molasses

2/3 cups of prepared yellow mustard

2/3 cups of lemon juice

3 ½ tablespoons of chili powder

2 ½ tablespoons of paprika

*2 Cups of Rebel Yell Kentucky Bourbon.

Melt butter over medium heat. Add minced onions and garlic and saute until the onions begin to turn golden. Stir in remaining ingredients, reduce heat to low, and cook until mixture thickens. Stir frequently. This recipe makes about 8 quarts ( a little more than 12 mason jars). If you donÂt need that much, then set all measurements to a common unit of measure, like tablespoons or ounces, and divide for desired quantity (believe it or not, mathematics is taught in Arkansas. HA!).

*Any Kentucky bourbon or Tennessee whiskey will work, so long as that itÂs at least 80 proof. Use your favorite.

It keeps refrigerated for a couple weeks, or you can freeze it until you need it.
