I agree with GrillMeister. I bought my first Genesis 3000 when Weber first started making them in the 80s. I had a traditional Charbroil, and the aluminum castings corroded to where the whole thing turned white. Also, the "H" shaped pressed-steel burner corroded to where I had very little heat control. And the chrome wire grills lasted maybe a year. The engineer in me really liked the Genesis design with the pipes for burners, the flavorizer bars and the porcelain coated parts. I did the math, and if the Genesis only lasted up to its warranty, it was cheaper to own the Genesis than to buy Charbroils like the one I had. That Genesis lasted over 10 years. I'm now on my second Genesis; a 1000, which is about 8 years old or so. (I found I didn't use the external burner) I've replaced the bars and grates with stainless parts. And this past weekend, I replaced the rails that the bottom tray slides on. Weber sent those to me at no charge. If I were buying a new grill now, it would be a Silver C. I wouldn't spring for the Gold, cause the SS lid is not that big of a deal to me. I can replace the bars and grates in stainless if I need to down the line. I wouldn't spring for the Summit series, 'cause it's a lot more money for something that is not much more functional. It does look cool, though... The Silver Weber is a great cooking machine.

I see you created two threads for this. I'll repost what I wrote in the other thread for continuity. ------ I have the Weber Performer. It's an awesome grill. I used a Weber kettle for years with great success, but in a moment of weakness I retired it for a Weber Genesis gas grill. Gas grilling is convenient, but it's not the same. Last year I purchased the Weber Performer to get the convenience of gas starting, but the cooking flavor/performance of charcoal. First, the propane assist is just a charcoal starter. I stack the charcoal in a compact pile over the starter and ignite it. Of course the bottom vents are wide open and the lid is off at this point. After about 3 or 4 minutes, I can hear the charcoal snapping, popping, and smoking to indicate it's "lit." I turn off the propane and let the charcoal burn down until nearly all sides are covered with fine layer of ash. Then, I knock the pile down and spread it evenly across the bottom grate for cooking. Now, I put the top grate and the lid on and open the top vent wide open. I watch the temperature climb to >400 degrees, then open the lid and brush the top grate to clean it. Close the lid and use the upper and lower vents to control the airflow and thus the temperature. After some experience, I know just about how much to close them down to hit a temperature range I'm after. This assumes you're using good quality charcoal and not using too much of it. I prefer the hardwood "lump" charcoal. The old standard Kingsford briquets don't seem as high quality as they once were. If, for instance, I'm cooking hamburgers, I'll have just enough charcoal to cover the bottom grate with the chunks spaced 1/2" to 1" apart. Hamburgers cook pretty quickly. Don't use the little half-round trays Weber includes to hold the charcoal for normal grilling. Those are for special circumstances when you want indirect heat. When I'm done cooking, I close all the upper and lower vent to extinguish the charcoal. I use the leftover charcoal from the previous grilling as the base of for the next cooking and add a little more from the bag to make the pile I want. One more tip, use the lower vent control lever in a back-and-forth motion BEFORE you begin to sweep the ashes into the built-in collection can. Clearing out any build up debris in the bottom of the kettle helps the airflow. Return the lower vent to full open position before lighting the new charcoal. If you aren't getting to the temperature you want, you may have crappy charcoal, inadequate airflow, or impatience. ------ After reading the additional information you posted in this thread, I'd want to reemphasize the need to mound the charcoal tightly on top of the propane igniter for the initial lighting and burn down. Turn the propane ALL THE WAY ON and leave it that way for the 3-5 mins it takes to light the charcoal well. It should sound like a weak torch with a touch of whistle to the outlet flame. Let the charcoal burn down in its mound before spreading it. Lid off and bottom vent fully open for the initial burn down. The propane igniter works great.

Ann the market is open every day except Sundays. However it does close for the day at 1 pm so shopping has to be done in the morning. It's nice to go and browse there although most everything seen is also available in our neighbourhood supermarkets. However when I can't find something special, I'll go to the market. It's also fun just to go and look as there is lots of parking space downstairs and a nice coffee shop where people sit around and chat, as well as a book shop, flower stalls, a German deli and a wine shop. Annie bubangos are usually more elongated and are a type of mild squash, white inside with seeds like a cucumber. These round ones are a new type. They're a vegetable similar to a zucchini. Kiwanos are an unusual tropical fruit, with a seedy green jelly-like pulp inside, a bit like a passionfruit. I have to admit I haven't had one for a long time. Here's a photo of how they look when cut open. Lee the sand is really black here as it's formed from volcanic lava. You can see some of the black basalt lava rock at the water's edge in some of my beach photos. It gets very hot too when the sun is out as it absorbes the heat so much more than light sand does. Also makes you look pretty dirty after you've been sitting in it. ;-). I really should get out more myself and go strolling around that beach. The sea air is refreshing. I agree with Alexa. A thermometer is worthwhile. I have had both electric and charcoal smokers. The electric is more convenient, but the charcoal gives better flavor IMO and is worth the slight amount of fussiness it takes to maintain the right temp. Best piece of advice I can give is to avoid the temptation to look at the food cooking. You may need to do so a couple of times during the cooking, but every time you take off the lid the system cools dramatically and it takes a good while to get back up to cooking temps. As far as wood goes, I really like pecan. You can use pecan shells if you have access to them. Hickory is good, but a little stronger than pecan. I used to live near an apple orchard; apple wood is great, too. I don't care too much for mesquite, but that's just me. Another trick is to put something fatty on the top rack and something that needs basting on the bottom rack. My dad used to do a pork roast on the top rack and as it cooked it dripped fat onto a turkey on the bottom rack. I've done ribs on the top rack dripping on to chickens on the bottom. Delish. I found I could smoke about 6 whole chickens at once. (They make little wire racks that make the chickens sit upright during the smoking, and that does make for a more efficient use of space. I found them worthwhile.) What I would do is smoke them, and then store them in individual freezer ziploc bags. Use a soda straw to evacuate as much air as possible, then seal them and freeze them. When you wanted a quick and yummy dinner, just take a frozen bird in its plastic bag, open the bag and put a couple of ounces of water or white wine in the bird's cavity, and microwave it in the bag for a few minutes till reheated. If you take the smoked chickens and take the meat off the bones, the meat makes a fantastic chicken salad; save the skin and bones, though, and you can make an incredibly rich and flavorful chicken stock that would jack up the flavor of many dishes like beans, soups, etc. What's really nice is that the cooking times are not written in stone, and slightly overcooking the stuff will not ruin it since it's a very moist environment. Another plus is that most of the work is done 3 or 4 hours (or more) prior to serving food. Once you load the smoker and get everything going, it really doesn't take much attention at all--in fact, most of the time it's better to leave it the heck alone. That means that if you're entertaining a bunch of people, you have time to check on everything else without worrying about the main dish. Much less stressful than, say, grilling a bunch of steaks for a crowd.
