| Howdy! Hope ya'll can help clear this up for me. I've got a brisket recipe that calls for baking in a low 200 oven for 3 or 4hrs, then to smoke on a pit or smoker for 4hrs basting every 20 mins. It also says "Do not cook, smoke only using hickory chips" How am I supposed to do that? I have a cylinder Brinkman Smoke and Grill. To smoke you're supposed to put the coals in the bottom, waterbath with chips in a bowl on top of that, and the food on a grill above the waterbath. So how am I supposed to smoke without cooking?? Any help greatly appreciated, Cory |

| Use a very small fire, only enough to heat the chips. Maybe 2 or 3 charcoal briquetts at a time. Or, use an electric hot plate. |

| Hmmm! Texan Here. When smoking not only do you make a small fire, but you push it to the opposite side from the meat so the heat isn't directly on the meat. Just the smoke. |

| I've started curing and smoking my own bacon. I built a smoker in which to hang the bacon, and I connect that to a cardboard box in which I have a cast iron skillet sitting on a hot plate. To take the smoke to the smoker, I use a piece of 4" flexible water heater duct. Works like a charm. |
