Caesarstone - Cutting "Quartz based slabs"

I was able to get a remenant for a vanity top. Has anyone ever trimmed these by hand? Do to an out of plumb wall (which is tiled so I cannot notch out drywall), I need to shave off along the back wall edge. When I scribed the stone to the wall, I need to cut off about 1/4" along a good portion of the length. I have a 4 1/2" angle grinder with masonary and diamond cutting wheels. Is this doable. Not sure if cutting is better or removing product with grinding off the edge? Thinking grinding may be best angling up from the bottom edge to the top edge just to my scribe line (take more off on the bottom and less on the top finished edge? If this is not doable, may just fill with caulk.
