Best matte-sheen marine level finish?

Hey folks esp. Mongo : ),

I'm wanting to cover this amazing walnut-veneer 70s piece I'm installing as a tall cabinet in our third bathroom with some extra protection in case of water, but I don't want to go full sheen as I did in our master bath.

What is a *high quality* but matte extremely waterproof finish for wood that won't yellow it? Anyone know?

I'm sure the experts will chime in, but have you looked at Water Lox. The satin finish is excellent, not quite matte, but close. And it is extremely waterproof.
