Use shower during remodel?

We are contemplating a bathroom renovation which would begin with tearing out the old tub/shower, installing a new one, putting up new walls and tile surround at a bare minimum.

There is only one tub/shower in the house.

Is it OK to use the existing tub/shower while it's still installed provided that we keep the temperature down, use little water (navy shower), keep window/door open, fan on, and cover the exposed wall with plastic sheet?
