It just looks like a rug on their website. Why would you need an installer? To cut it to fit?

You can do wall-to-wall over the floor, and I'd love to have it go around the toilet base, cabinet and whatever else sticks out of the floor.

Uh, I believe the website says it is not recommended for wet or damp situations. Would you plan to be air drying it after you mop it? I think you should re-think your plan.

There are floormats (not wall to wall) made for bathrooms, so it should be OK, I'd think, depending on what's underneath?

Yes, you can lift clean and air dry floor mats, but a wall to wall piece would be difficult. Been there done that back in the 70's with wall to wall bathroom carpeting (rubber backed) in a bathroom. Never again.

I have Chilewich tiles on my kitchen floor (an area that gets a lot of water). Put them down a few years ago as a short-term solution. It worked out so well that we ended up putting Chilewich tiles in several other high-traffic areas of the house.

Tiles around the edges were easy to cut, and tiles in the middle are secured with Tac-Tile fasteners -- makes it somewhat like a floating floor.
