We're doing a new bathroom with a 36" Vanity. Next to the vanity is a 28" space that ends in the room corner. We're thinking of going with Granite for the vanity top and extending it 28" past the vanity into the corner. Will this be a problem if the front edge is unsupported for 28". The whole slab will be supported along the back edge, both sides, and for 36" along the front. Can we avoid problems by adding a 2X3 or 2X4 (in nicely finished hardwoord of course) to the 28" along the front tied into the vanity (which we are building as well) on one side and the wall on the other or it that overkill? Would prefer to avoid a post in the middle

You're fine. That's no different than a dishwasher.

I'd ask the granite place to rod the granite (insert steel supporting rods) along the front edge as well as use the blocking on the back and side walls.
