Fixing uneven spots in subfloor

So I use a straight edge to check the subfloor for flatness. If I find peaks I resolve them with some sanding. If I find valleys I should use a self-leveling compound and pour it on the floor. My question is do I pour it over the entire floor or just the areas where there are valleys (fill them in)? Then after it dries, if I poured too much and created peaks, just sand them down.
