We ordered a 60" Culinarian with 4 burners 12" grill and 24" griddle. I read the manual and it appears that the griddle is thermostatically controlled up to 500 degrees. Does anyone have experience with a capital or any other 24" griddle? My question is does it really heat up to 500 degrees? Any idea about the burner shape below it? Is it a hot center and cooler when you fan out from center?
