Why would they NOT work together? The blower attaches to the fan output on the hood whether hard wired or through a plug. The 3 speed controller would then send power to the fan blower. It's very basic electrical work.

That being said, I had a Thermador hood in my last house and I could not stand the 3 position fan controller. It was never the right speed and very diificult to live with. If the walls are open I would consider installing a dimmer switch on the wall to control the blower. It is easier reach and modulate and will not get covered in grease.

Note fan "dimmers" differ from lamp dimmers in that they turn from off to full on, and then "dim." They are also designed for the inductive loads typical of induction motors. So be sure to pick a suitably powerful fan control, not lamp control.

Wall mount may be necessary depending on your hood's configuration.

I prefer more control of the fan than just the 3 level settings on the thermador. Is there a fan control that people in the forum have used and liked?

Luton makes suitable models; you can put a matching Lutron lighting dimmer for the under-hood halogen lights right next to it.

BTW, you need at least 3.3 Amp capacity in the controller. So the nifty Lutron light+fan combos won't work, you need a full-size fan controller.
