we've been having some incidences of late with the drain pan of our 5yo Thermador SxS overflowing. In looking for a solution, I found that the bottom gasket is very funky with black mold, whereas the sides and top are quite white. Has anyone experienced this?

The mold stains may not be fully removable. Try a weak chlorine bleach solution if baking soda isn't sufficient, rinse well. The cause likely is condensation keeping it wet for extended periods of time. Is your weather more humid than usual? Defrost condensate overflowing the drain pan capacity is reasonable coupled with increased humidity.

we have fairly humid summers here. I'll try the bleach solution if the bs and water doesn't get it all.

If it is the true SxS Thermador. There's a kit to force more air down to the drain pan for quicker evaporation. You can do this yourself by removing the upper compressor cover and on the left you will see a 7 column grid style opening. The kit just covers 25% of the grid and this forces more air down a vent in the back of the refrigerator and across the drain pan. Cover the right two columns of the grid with duct tape and you've basically done the same thing as the kit does.
