Here's what I want, what do you think I should get?

I want: at least 4 burners (gas or induction, can't decide), a griddle (the only factor that is steering me away from induction), a large full size oven, a smaller oven (pref. one of those micro/convec combos). I don't really want 2 full size ovens I don't think. Or do I....?

I was leaning towards the Bertazzoni 48 inch dual fuel with the griddle, but the oven sizes (2.9 cu ft and 1.8 cu ft) seem SO small compared to the oven specs of just about every other model I've seen. What is the deal with that?

LG has a cooktop with a bridge feature for a griddle. Newegg has it for 1800. The new Thermador/Gaggenau is zoneless and would work but is expensive. AEG has zoneless cooktops without US service support shipping from the UK. 1k with 150 Fedex. These are on their third generation. An oven below or dual setup of your choice gives you options.
