BlueStar Range Bread Baking and Steam

Hey all,

I'm seriously thinking about buying the BlueStar Platinum 48" for its amazing high BTU stovetop but haven't heard enough about the oven performance.

Specifically, I'm worried that there is no info anywhere about how the oven performs for bread baking. I bake a lot of artisan bread (which benefits from steam in the first 10 minute to gelatinize the proteins and improve spring and crust) and am not sure with the PowR burner how dry the oven gets.

Can you steam with water on cast iron, spray or ice without disrupting the burner functioning? What kind of results are people getting?

Would love any input before we pull the trigger on this beast.
