Are you asking if the NXR burners are adjustable enough to control or adjust pressure? Sure. I frequently use pressure cookers on mine.

Are you asking if the grates can hold up to 40 or fifty pounds of weight (20 quarts of water, the jars, plus whatever you have in the jars)? Sure.

Or, are you asking of the NXR's 15k-BTU burners can it bring a big pot to boil? Yup.

I think the designation is just for marketing. I don' see anything the specs except that the oven lights are now 25 watt bulbs. The ones in mine are 20 watt halogent bulbs. Maybe the "x" oven light bulbs are different?

One other point: have you considered getting the middle grate? Some people like it (me, for instance), some people don't care. Price for this extra from Costco seems the same whether ordered with the stove or later.
