best appliances for novice?

I like to cook but I'm not particularly skilled...I follow recipes. I don't do a lot of complicated things though. I'm currently using a low-end frigidaire gas range in a rental. It's annoying because even with my nice pans (All Clad, Le Creuset), the pans heat unevenly and the grates are so flimsy they slide around. The oven always burns the bottom of things. And the black enamel top is always looking smudged.

So do I really need a Bluestar/Capital/Wolf? We are looking for a gas cooktop or rangetop + electric double ovens for our new build. I do love the look of pro appliances, but I mainly just need a stove and ovens that heat evenly and are easy to clean. I don't think I need super high power since I don't even usually use my current stove on high, and if it would make us have to buy a bigger hood it would be even more trouble.

Budget is about $5k for both cooktop and ovens...

If you want heat significantly more even than your old Frigidaire you want Bluestar,Capital Culinarian OR Induction.

High heat is required to sear,suate,and wok properly or boil large amounts of liquid quickly.It has nothing to do with complicated recipes or skill level per se.

Induction will require a less powerful hood.

What size appliances are you looking at?

Well, when I turn my frigidaire on high and try to brown meat for stew, I get nasty black burned stuff on parts of my pan...I am assuming that's my skill level and why I don't use that setting much?

We are looking for 36" cooktop or rangetop and 30 inch ovens...

You have nice pans.

So I think the problem is too much time over (relatively) medium heat.

High heat over a short time will allow you to brown properly without burning the meat.

The other option is low heat over long time and gray meat.

There is no secret 5th degree black belt skill taught at culinary school to brown meat.

Cool! I didn't realize that Bluestar made a cooktop that was in that price range. Are the burners the same as on the range and the rangetop?

How big/expensive of a hood do I need with that?
