36 gas cooktop - Capital Maestro, DCS, Viking Pro, others?

We are replacing an older Dacor cooktop that I hate with a passion. Ignitors are finicky and often go out or don't light properly, plus I dislike the layout and the underpowered burners. I would prefer a layout where the handles are on the side versus front since I'm short. Priorities are having at least one powerful burner (17K or higher), plus the ability to melt butter/chocolate on a simmer burner. Swapping it out for a rangetop is not an option because it's set into a granite countertop. I've worked cooking in professional kitchens and prefer gas to induction, and want heavy continuous grates, but also want burners that aren't too difficult to clean or reassemble. Recommendations are very welcome!
