Ah yes, the perforated ceiling (or its economical counterpart, the grid ceiling) -- potentially excellent at capture and containment, but has a functional defect; grease builds up above the grid and becomes a fire hazard (among other undesirable consequences). Commercial versions use intense ultraviolet light to break down the grease and convert it to gaseous products. In addition, the commercial versions are fully enclosed with steel to meet fire codes.

Skipping ventilation requirements to the lighting issue, you may wish to to evaluate whether the preferred hood's light sockets are compatible with having its lights replaced by PAR type LED bulbs. These will be cooler over one's head and are now bright enough to match halogen equivalents at much lower input power.
