Each burner has an air adjustment shutter on it. If you rotate the sleeve, it adjusts the amount of air that gets mixed in with the gas flowing to the burner. You might try changing the air adjustment just to see what happens...

Great idea - thanks! I know what you're talking about, but there isn't a "customer accessible" one. When the local service person had the "hood off" replacing the burner, there wasn't something that looked like that - altho I'm sure there must be one somewhere.

I will ask the Dacor Customer service dudes, I wanted to know anyway - cause "simmer" looked like it could be a little lower.

Yeah, I did some searching around and also discovered that closed Dacor burners have no air adjustments. Very strange. I've never seen a stove burner that didn't have an air adjustment shutter immediately down stream from the gas orifice. The only part that might have an adjustment on it is the gas pressure regulator, but I wouldn't mess with that.
