Lacanche question

Hi everyone:
I am a few weeks away from ordering my cabinetry, and have recently discovered Lacanche (through Gardenweb ). I have been unable to see one here in N.C. where I live. AC has been pretty helpful in answering my questions. One thing I am hoping to gather from Lacanche owners is how it does from a "performance" standpoint. Such as "the burners are amazing because..." or "the oven works better than other ovens because..." .
I do cook a good 6-7 days a week for my husband and kids, and love to bake. I also love the idea of open burners (as I don't need any help with uneven cooking-i can do that already..:)

| When we bought our Volnay, I was worried that I'd made a very expensive, impulse purchase based on form only. I was wrong. The burners on the Lacanche are my favorite part of the range. They are very powerful and produce a nice, even heat. I have two complaints though. They don't simmer well and they don't have an automatic gas shut off if the flame goes out. We lowered our simmer flame in an effort to fix this problem, but after several incidents of the flame going out unnoticed (till the kitchen filled with gas fumes that is) we raised it back up. Someone recommended a flame tamer which I bought and use (it's great) but it irks me a bit to have to use it on such an expensive cooking machine. I don't bake in the oven as I have a Gaggenau wall oven, so I can't speak to oven performance. I do like the range very much and it is beautiful but would I buy it again...I really don't know, especially after reading about the Aga 6-4. I don't know whether it was out when we planned our remodel but I hadn't heard of it. |

| Thank you very much Cheril27, for sharing your experience with the Lacanche. I too was thinking about the Volnay. What do you think of its warming cupboard? Is it drying at all? Thanks |

| We've had our Volnay for a good while now (maybe 16 months or so) and love it. Everything works quite well. I agree that it can be difficult to maintain a very low simmer on a smaller pot, but we've done fine with larger ones. I guess our main complaint is with the "convection only" oven. My wife does a lot of baking and she's had a lot of adjusting to do to get things to come out correctly. On the other hand, it works wonderfully for roasting and broiling. We find the hot cupboard to be great at keeping things warm before serving but haven't put anything in for any extended period of time. I would assume that excessive drying might be a problem if you left anything in there for very long. Another interesting point: When we had it installed, the guy who put it in had never seen a Lacanche before. He was recommended by a local high end appliance firm, though, and he's installed a lot of expensive items in kitchens. He was very impressed with the build quality, the simplicity of the design, and the ease of cleaning for the range top. We didn't do any comparisons to the Aga 6-4, so I can't comment on how the Lacanche would stack up to it. Anyway, good luck with your decision! |

mamabrown, I've been cooking and baking with my Cluny for 8 years and I've been very pleased with its performance and appearance. I do use a simmer mat that I purchased on Amazon.com and it works well for simmering. I'm still amazed how quickly a pot of water comes to a boil. It is easy to clean,too. |

| Thanks for your responses. Now I must go forward and choose one. I know it is a "princess problem", but it is still difficult! |
