I would try them again at 375 if that's what the recipe calls for. I never lower the temperature 25 - I leave it as in the recipe and some things get done quicker.

I would get an oven thermometer so you can check the temperature of the oven. Some Profiles automatically decrease the temperature 25 degrees when you turn on the convection. It could be running too hot.
Does your oven have a third element, also called true or European convection? Does it have choices like convection bake or convection roast or a straight convection setting? Some just have an on and off switch for a convection fan. Do you have the model number?
If you have different modes which did you use?

My GE Profile automatically reduces the temperature 25 degrees below what I input. For cookies I've found it best to keep the temperature called for in the recipe. So if the recipe calls for 350 I input 375.
