Converting a 3 speed hood blower to continuous control

I've read several GW posts which mention installing a hood and internal blower assembly that comes with fixed control settings, but then converting it to one with a continuous control during installation. But what exactly is involved? I installed a Casablanca ceiling fan in our house many years ago with a rheostat wall control and it was pretty straightforward. But the fan and control came as a package and were meant to be installed together. Would converting a vent hood blower be as easy as wiring it to a wall rheostat instead of the 3-step control knob in the hood? We're considering an Air-King P1836 with a 900 CFM blower that runs at 3 speeds when installed in the hood - 300, 600, or 900 CFM. We feel it's a good value, but would prefer continuous control and were just wondering how difficult it would be.
