Finally, a Dumpling to Love!

I have never been a big fan of dumplings. My mother made them often. Hers were tasty but lead heavy. My daughter has experimented several times and the results were still very heavy. I decided to search this forum for some ideas and found the recipe below. OMG not only were these delicious but they were also nice and light. Yum!


Buttermilk Sage Dumplings

1 1/4 cups of flour

1/4 tsp sage (I used ½ tsp. poultry seasoning)

1/2 tsp garlic powder

1/4 tsp salt

2 tsp baking powder

2 tbsp butter, softened

1/2 cup low fat buttermilk

1 large egg, lightly beaten


Combine the flour with sage, garlic powder, salt, and baking powder in a large bowl. Cut in butter with pastry blender until the mixture resembles coarse meal. Combine buttermilk and egg, stirring with a whisk. Add buttermilk mixture to flour mixture, stirring until just combined.


Drop dumpling dough, (1 TB per dumpling), into the soup. Cover and simmer on low for 8-10 minutes.

I love dumplings......either these bisquit-ish ones or the noodley ones or the ones made with soggy bread!
I have made something like yours but with lots of parsley instead of sage. I still get misty about a liver dumpling I had at Peppi's Porch in Vail....not much liver....lots of bread....lots of parsley....served alongside some thing sausagey, wurstish....washed down with beer accompanied by men in lederhosen playing the accordian and singing drinking songs!

I love dumplings done just about anyway.......my favourite are the noodley type I call sliders ......with great hunks of chicken and swimming in thick chicken gravy .

Ann T had a fabulous recipe for a bread " dumpling" done up in a roll like a sausage. I'll have to looking for it
