Jeweled Fruitcake
This is the only fruitcake I have ever liked. My husband doesn't like it and I have nut allergies in the family now, so I haven't made it in years. I think I am going to go ahead and make it even if I am the only one who eats it. It is so pretty and so moist. I don't know if you can even find the mix anymore. A friend gave it to me in 1989.
Jeweled Fruitcake Bake at 350* for 89- 90 minutes
2 eggs
1/2 cup water
1 jar NoneSuch Rum &Brandy Mincemeat
2 pkgs Pillsbury Date Bread Mix OR 2 Nut Bread Mix plus 1/2 pkg chopped dates
2 cups (16oz) candied fruit mix
1 cup chopped nuts (I use pecans)
1/2 cup brandy or rum(I use rum)
Generously grease and flour a tube pan. In a large bowl, combine eggs and water. Stir in mincemeat, bread mix, nuts, and fruit. Spoon into pan. Bake until toothpick comes out clean. Cool slightly and remove from pan.Pour rum over top of cake. Wrap cake tightly in foil. Store at least one week before using.

Can you use something else to soak it in. Maybe orange juice? I don't care for rum. Otherwise I can send you my address! I think this might be the year I buy one for myself. I wonder if our local bakery will have them........
I don't see why any fruit juice like orange or pineapple or cherry wouldn't work. Maybe someone who has made one before has an idea. Maybe just use a 1/4 cup of juice? I just liked this one, because it was more like a cake and not as chewy as the ones you buy. I make have to make two small ones and try it both ways.
Can you believe I forgot to look for the nut bread mix yesterday! I don't anticipate going to town for at least a week but it's on my list now!
This is my mother in laws no bake fruitcake. It is pretty good and my husband absolutely loves the stuff.
Lucille’s Unbaked Fruit Cake:
1lb. graham crakers(or box of crumbs)
1/2lb. raisins
1/2lb. chopped dates
1 lb. mixed candied fruit
1/2 cup candied orange rind(optional)
1or2 sm.cont.maraschino cherries(if you
really like cherries add 2)
2 cups nuts(or more if you have it and
no need to chop)
1 tsp.cinnamon
1 tsp.allspice
1 large can evaporated milk
1lb. mini marshmellows(1bag)
Crush crackers and add chopped fruits.
Heat milk and add marshmellows. Do not
allow to melt completely.
Pour this over dry ingredients.
Mix well and pack firmly into loaf
pans.
Store in refrigerator a few days before
serving.
*If you want to flavor with rum or
bourbon poke holes in top with toothpick and slowly pour a jigger
over top(just one!). These do have to "age" in the fridge
so don't rush it. And they freeze well.
I found everything at Publix today, but I forgot the amount of fruit I needed! They only had the nut bread mix, but I think that was all I could find years ago. Raven, yours sounds good also.
It won't let me edit to say I store mine in the fridge. It is OK out all day with the deserts, but doesn't need to stay out all the time.
