What's for dinner Friday?

I really don't feel like eating tonight. I'm so upset about the children in CT. But I have to feed Harry. I'm fixing chicken breast, cauliflower and a baked potato. All white stuff, but he won't care :-)

What are you having tonight?

Lunched at Hartley's Down Home Cooking, and everyone was watching the television in dismay :o(

I had fried catfish, never had it there before, and it was excellent, with their really good coleslaw. I'm picky about my coleslaw.

BTW, love my seashell card :o)

All white stuff sounds good to me too.

It's been years since I've made my own lasagna. Today was the day to do it. I'd forgotten just how much work it can be, but it tastes good. I guess I spoiled myself with Stouffer's easy peasy way.

I also made cracker dressing to fulfill a special request from my son. Now, sometime in the next couple of wks, I'll have to make it again for my youngest daughter's family.

Cracker dressing! Hmmmm, tell me more. I have not heard of it before but anything with the word dressing usually catches my eye.

I am having hot boudin for dinner. I am in my RV down on the lake in Cajun country Louisiana,giant trees dripping moss,just beautiful looking out the living room window.
Tomorrow is our big family meal and gift giving. Having a great time.

So sad to hear of the shooting tragedy.

I've been making ritz cracker dressing for many years. Got it from a former KT'er Elle_NY.

It's the only dressing my son will eat.

No dinner here tonight. Big lunch for all. I'm so glad the entertaining is done. From now until Christmas I get to be the guest, PHEW! That lasagna sure sounds good to me. I think I'll make some over the weekend for the freezer. DS says he's coming for a week at Christmas. Of course, he never does stay a whole week. I think he gets too bored. I like to be prepared, though, with some pre-made meals so I don't spend all my time in the kitchen when he does come.

Thanks, Glenda. Always think about my friends and friends I haven't met yet at Christmas time. Harry just said last night he'd like some catfish. I only like it fried though--and I don't do much of that anymore.

Shirley, I know what you mean. I really like Stouffer's lasagne and haven't made it for years--well, I did make a crockpot lasagne that Luckygardnr posted and it was delish! I made cracker dressing once. My notes say it was good, but can't replace regular dressing :-)

Lucky you, Raven! Enjoy every minute at your beautiful camping site and with your family. Tell us all about it when you get home, okay?

Oh, Glenda--that's the dressing I made. Don't know if it's the same recipe, but after you posted I remembered it was Ritz crackers.

Geez, Georgysmom, it's a well-deserved break for you. I like to make ahead when the kids come, too. 'Cept our CA kids have so many things they can't/don't eat, it's just easier to put some meat on the grill and throw some potatoes in the oven! Enjoy the rest of your holidays! (Accent on REST!)

My Mom's way of making cracker dressing is the only way I know how. I have no 'measurements'.

Take approx 1 and a half sleeves of Zesta saltines and crumble them up in a bowl. Chop up a medium to large onion finely. Hard cook 7 or 8 eggs, chopped in 8 pcs each. Mix together. Can toss in pieces of the chicken you cook.

Cook up some chicken to make broth. Heat it up and add to the cracker mixture until it's thoroughly moistened but not soupy. I use some of the broth and make a thin gravy in the same manner you make a white sauce. Add a small amount to the dressing, leave some to have a little on top of your serving if you want.

I hope you can understand the directions. We never had this in place of regular dressing, just as an occasional treat. Some restaurants in my small little community used to serve this as a side dish.

I put a small chuck roast in the crock pot and made tacitos with it. I'll smother them in Las Palmas green chile sauce and bubbling cheese, then top with shredded lettuce and sour cream. :0)
