Here I go again: have 25 yes's for potluck tomorrow

Going to have our monthly potluck luncheon, and we generally have a great turnout, but big numbers for tomorrow.

Usually 15 come, but 25 have replied. I've checked and double checked so we shall see.

It's at one of the two male attendants at our water aerobics class. Last year, Tom had a great turnout, so guess that's why the bigger numbers. Plus a fantastic house.

I'm making wild rice and sausage casserole, and candy corn mixed with honey chex mix and peanuts. The mix is really good.

And it will be a surprise birthday for the host, that I've been working on.

At least we won't be going to a restaurant where I really needed an exact count.

Potluck, we bring the food, host/hostess only sets up.

Should be a good one.

Glenda, don't eat between now and lunch tomorrow :-) I saw that chex mix with candy corn on Pinterest and it sure looked good. Better make a large casserole. I have a feeling it's going to be a big hit. But then, I just love wild rice!!

One gal told me already she's making homemade chicken and dumplings. Yum on that.

What's so hard is getting someone to commit! There's a lot of work setting up for a potluck. I've done it before for 27.

I've been the organizer going on 6 years. Lot of work in the planning. But I enjoy doing it.

Glenda, if you ever need a seat filler, I'm in!! I think it sounds like a wonderful time.

If you get a chance, would you share you rice/sausage casserole? If you did before, sorry, I must have missed it.

katlan, I've made this so many times and it's so easy and so good!

1 lb Jimmy Dean Pork Sausage ***used sage
1 box Uncle Ben's Long Grain and Wild Rice (Fast Cook Recipe) I used the oriiginal cause WalMart was out of the other
1 12 oz bag PictSweet Seasoning Blend (onions, celery, peppers)
1 can Cream of Mushroom soup
1 c. Shredded Cheddar Cheese (divided)

Directions
Prepare rice as directed on box (do not add butter or oil). While simmering, brown pork sausage with frozen vegetables (or use 1 c. each fresh chopped onion and green pepper & 1/4 c. celery). Drain when sausage is no longer pink and veggies are softened. Combine sausage mixture with soup, 3/4 c. shredded cheese and rice. Spread in 9X13, **used a smaller pan, greased glass pan and top with remaining 1/4 c. shredded cheese. Bake 30 min at 350
