Gray(ish) high maintenance as black?

We are going with white shaker cabinets (a popular choice here, I see!) but just cannot decide on a countertop.

We currently have either Uba Tuba or Black Emerald granite (not really sure which ) and I.HATE.IT. It shows every streak from my sponge, paper towel...anything, really. It never looks clean to me.

DH likes the contrast of dark counters/light cabs but I'm very scared of anything darker than a lighter brown. I do like the look of ceaserstone's pebble, raven, or cambria's sussex.

Are those as much trouble to look clean as the absolute black's of polished granites?

I have dark mottled gray Caesarstone and it doesn't show anything. Good, right? I think not so much. I like a pristinely clean and smooth counter and, since I can't see every little drip and drab, I miss stuff. I have to continually run my hands over the surface to find missed spots. I have white cabs and I love the look of dark counters, but I think next time I will go with light counters.
