Soapstone on outdoor kitchen

I have recently built an outdoor kitchen. L-shape with large round sitting island attached. I live in San Diego. It gets really dusty here, and I wonder if oiling is a smart way to treat the stone. Any thoughts? Thanks so much in anticipation.

We got a sample of soapstone once (it was about 1 foot x 2 feet), got it home and left it outside for years. It oxidized so nicely without any oiling. We literally left it in the rain, sun etc.

I wish I could put my kitchen counters out in the rain/sun for a few years!
