Should wire marked. "THWN THHN 600V gasoline/oil resistant", be used to connect ballasts to T8 sockets within the luminaires?

Are those conductors suitable to be used inside the fixture for the power supply?

Yes, that is the question. My understanding that the strip fixtures are considered to be enclosures equal to junction boxes and conduit. If this is not the case, in this context, please correct me. That leads me to beleive that any wire that can be used in conduit or junction boxes would be a correct conductor to be used within the strips.
