changing pickled cabinets

My husband and I are debating if we should paint or restain our current pickled cabinets. Have any of you re-stained wood with the pickled finish? What process did you use to removing the pickling? I had a company give me a quote where they were going to stain directly over the pickling finish (i.e. not use a stain stripper). They said they have done it many times; but I can't figure out how it comes out even looking. The folks at my local harware store weren't much help; so if you can help provide any input I would appreciate it.

I can tell you what won't work -- Polyshades. It may work to glaze and top coat or spray a toner, but if I were you, I'd ask the company to run a sample on the back of one of your doors to see what they have in mind.
