polyurethane yellowing before my eyes

I sprayed satin polyurethane I purchased from a craft store, no idea if it is oil or waterbased, on a strip of wood painted white with painted stenciling. It turned yellow before my eyes by the time I got to the third coat. I thought polyurethane was not supposed to yellow. Was I mistaken?

Yes, you were mistaken. Oil-based polyurethane "ambers."

Water based poly can pull sap or stains out of wood and appear to be yellowing. In that case it would not be the varnish, but the wood.
