RECIPE: Dairy-Free Lemon Bars

Dairy-Free Lemon Bars

1 1/4 cups all-purpose flour, divided

1 cup sugar, divided

1/3 cup margarine, softened

1/2 cup egg beaters

2 teaspoons lemon peel, grated

1/4 cup lemon juice

2 teaspoons powdered sugar

In a medium bowl combine 1 cup flour and 1/4 cup granulated sugar; cut in margarine until mixture resembles coarse crumbs. Press mixture onto bottom of 9-inch square baking pan. Bake in a 350 degree oven for 15 minutes or until lightly browned. In a small bowl combine egg, lemon peel, lemon juice, remaining flour, and granulated sugar; pour over prepared crust. Bake for 15 minutes more or until set. Cool slightly; sprinkle with powdered sugar if desired. Cool completely in pan on wire rack; cut into 32 (2' x bars.
