Countertop questions/suggestions

We are meeting with our KD tomorrow and one thing we will discuss will be countertop materials. I am staying as eco-friendly as our budget allows. Right now I am leaning towards reclaimed timber. Cabinets will be off white-simple design. I love ice stone, vertrazzo and ribbon glass, but I am finding them rather pricey. Granite and ceased stone are also nice but I do not like the possible radon issue. We just put in a radon reduction system and so introducing radon does not make any sense. What other suggestions does anyone have? Floors will be cork.

We are going with
It's a lot like Vetrazzo, but resin-based, instead of concrete.
It's $60 per square foot (not counting fabrication).

Have you looked at Eco-top? No direct experience, I just saw some in a showroom. It's similar to Paperstone and Richlite, but less expensive and also comes in light colors, which they don't. Love the idea of the cork floors!
