RECIPE: Sweet Corn Pudding - a winner at Xmas

This side dish was a hit at Christmas. There were a couple of things done differently so use the link to see the original. Also the bag of Trader Joe's frozen roasted corn is not 16 oz. Maybe 14 oz.? It works just fine.

Sweet Corn Pudding (Nancy Fuller - Food Network)

4 oz. cream cheese, room temp.
2 eggs
1 c. cheddar, shredded
1 c. 1/2 & 1/2
1/2 c. bread crumbs
2 T. honey
1 T. fresh marjoram (subbed fresh dill)
2 shallots, chopped
16 oz. bag frozen corn (Trader Joes roasted ~ 14 oz.)
4 T. butter, melted
salt & pepper

Preheat oven to 350 F. Well buttered 9 x 13 pan.

Whip cr. cheese; beat in eggs; mix in remaining ingred. except corn/butter.
Stir in corn and butter. Salt & pepper to taste.
Bake 45 min.

I love corn pudding, especially at Thanksgiving, but I'm apparently the only one in my family that really likes it. This recipe is different from mine, sounds interesting & maybe it is the twist mine needs to make it more memorable. Thanks for sharing!

I have never seen roasted corn in this area. I wonder if you could roast it yourself somehow? The recipe sounds delish, what is the texture like? Is it quichy? or just creamy?

Louise, it's more quichy. And you can bbq corn on the cob, then remove the kernals, and use. Sorry for the late reply.
