LOOKING for: Sea Foam Salad

annova914December 9, 2007

Is this the correct recipe for Sea Foam Salad? What is "dry cottage cheese"? I had Sea Foam Salad years ago and lost the recipe that I requested from the person who made it. I found this at RecipeLink. thanks! Ann

Sorry - here's the recipe I found:

1 (1 lb 13 oz) can crushed pineapple
water (as needed)
2 (3 oz.) pkgs. lime jell-o
1 tsp. salt
1 lb (16 oz) dry cottage cheese (drain in sieve)
1 cup small diced celery
1/2 to 1 cup mayonnaise
1/2 cup chopped nuts

Drain syrup from pineapple. Add enough water to syrup to make 2 cups. Heat to boiling point.

Dissolve lime jell-o in boiling liquid. Add salt. Cool until slightly thickened.

When beginning to congeal, fold in cottage cheese, celery,
mayonnaise, crushed pineapple, and nuts. Pour into mold or
9-inch square pan. Place in refrigerator to chill and set.

Serve on lettuce leaf, topped with a touch of mayonnaise.

Dry cottage cheese means you've drained it in a sieve of the excess moisture. Here's one version & there's another at the link below:

I've made this numerous times, but not like it's listed above.

2lb small curd cottage cheese
1 sm box of jello-I usually use lime
1 cup miniature marshmallows
1 sm Cool Whip
1 sm can crushed pineapple-drained well

Place cottage cheese in a fine hole colendar & press gently to get most of the liquid out. Place in glass or plastic mixing bowl.

Sprinkle the jello powder into the cheese and gently fold it through. Add the pineapple, marshmallows, fold in and then, add the Cool whip and fold in gently. Allow to chill 1 hour before serving.
