RECIPE: Lemon Kisses- turned to goo!

What did I do wrong? I made Roselin's Lemon Kisses for the first time yesterday to utilize some divine Meyer lemons from a friend. They tasted like little lemon meringues. The weather was very dry, I let them cool on the parchment paper on the granite counter. To take them to DD's house I placed them on layers of wax paper and then into an airtight Tupperware container. When I removed them several hours later, they tasted fine, but their consistency was a gummy goo.

What happened?

I don't know the recipe....but my guess is you didn't cook them long enough.

Whenever I make meringues, I leave them in the oven overnight so that they are well dried before I put them in a covered container. That way they are well dried.

Thanks Roselin, I think that must have been it. I knew to dry them for a while on the counter before packaging. I guess it just wasn't enough. I've really only made meringues once before, I guess my inexperience showed!

Compumom, you are very welcome.......hope you will try the recipe again and that it works for you. I put them in the oven, bake them the like the recipe says, then turn off the oven and leave them in there overnight.

Lemon Kisses

Here is something light and tasty.
Lemon Kisses
2 egg whites at room temperature
1/2 tsp fresh lemon juice
1/8 tsp cream of tartar
1/2 c sugar
zest of one lemon
Preheat the oven to 300°. Lightly spray` 2 baking sheets with Pam.
Beat egg whites with lemon juice and cream of tartar until soft peaks form. Gradually add sugar one T at a time and beat until the egg whites are shiny and stiff peaks form.
Gently fold in lemon zest.
Drop 1 1/2 inch mounds on cookie sheets 2" apart. Bake 20 minutes or til cookies are lightly browned. Transfer to cooling rack and cool completely.
May substitute orange juice and 2-3tsp orange zest for lemon.
