RECIPE: overnight breakfast casserole

I'm looking for a overnight breakfast casserole. I googled it but came up with so many different varities that it confuses me. I thought I'd come here and see what recipes you all have. The one I'm looking for has sausage. I can't remember if it was made with hashbrowns or bread cubes. Thanks for whatever help you can give me.

This is one I made last year, and will have Christmas brunch.
It's really good! Serves 8

BREAKFAST CASSEROLE

1 lb. sausage, cooked, but not dry, drained
1/2 lb. grated sharp cheese
8 slices white bread, crusts trimmed
6 eggs
2 c. milk
1/2 tsp. salt
1 tsp. dry mustard
Dash of pepper

Grease a 9"x13" Pyrex dish. Place bread in bottom of pan, squeezing until bottom is covered. Layer cheese, then sausage. Mix together eggs, milk, salt, mustard and pepper. I use a blender. Pour egg mixture over the bread, sausage and cheese. Cover and refrigerate overnight. Can be frozen at this point. Bake at 350 degrees for 30 to 35 minutes. If you freeze it, thaw in refrigerator 24 hours ahead. This is wonderful for Christmas breakfast because you can prepare it days ahead and just bake it Christmas morning.

This recipe is simple but leaves you room to add in some family favorites - my cousin adds in some red bell pepper and another friend adds in some hot japalenos (diced/canned) - so I guess you can do what you wish with this recipe.

OVERNIGHT BREAKFAST CASSEROLE

2 lbs. package frozen Hash Brown potatoes, thawed
1/4-1/2 cup chopped onions
1 lb. cooked, crumbled sausage (breakfast or Italian style - I use Italian) or cooked bacon or ham
2 cups shredded Cheddar cheese
8 -10 eggs
3 cups milk
S & P to taste

Spray 9 X 13 dish with cooking spray. Mix potatoes and onions, salt and pepper together and place in pan. Then spread sausage on top, then cheese. Beat eggs and milk (S & P) together and pour over other ingredients in pan, cover and set in refrigerator overnight.

Bake, uncovered, for 1 hour at 350*.

Thanks for sharing. Since I can't decide which one to make, I'll make one of them for Christmas day and one for New Years day.
