RECIPE: fresh cranberry bread
I've made a lot of quick breads but never a cranberry one. A friend made this and I loved the combo of the golden raisins with the cranberries. Tart, tangy with a burst of flavor from the raisins. Don't subst. with dark!
Not sure if it will be on my top 5 list but dedicating my last bag of cranberries to it.
Fresh Orange Cranberry Bread
2 c. flour
1 c. sugar
1/2 tsp. soda
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c.unsalted butter
1 T. orange zest
3/4 c. orange juice
1 1/2 c. fresh cranberries, finely chopped in food processor
1 1/2 c. golden raisins
Preheat oven to 350 F. Butter loaf pan
Mix dry ingred. Cut in butter. Mix in egg, zest & juice.
Fold in fruits. Bake 1 hour.
