LOOKING for: Clay Pot Recipe for Pork Chops

Hello all,

I kitchen company was going out of business here and I purchased a 50% off clay pot (st....topf) sorry too lazy to go look. Does anyone have a pork chop clay pot recipe that they have enjoyed?

I've substituted pork for the chicken in this recipe, cook in clay pot at 385 for 2 1/2 to 3 hours, until pork falls off the bone.

Chicken Cacciatore by Shopper (Christiane )

I use 5 or 6 chicken breasts ( Half a breast each )
3 tablespoons shortening ( I use light olive oil )
2 medium onions, thinly sliced
2 cloves garlic minced
3 stalks celery chopped
1 can ( 1 pound or 16 oz ) tomatoes - i use the diced ones
1 can ( 8 ounce ) tomato sauce
1/3 minced green pepper
1 teaspoon salt
1/4 black pepper
1/2 teaspoon crushed basil
1 bay leaf
1/4 cup Chianti wine ( if desired )

Brown chicken breasts in hot oil in skillet
Layer onion slices in slow cooker
Put browned ckicken pieces on top of onion slices
Then add remaining ingredients ( i put them all in a bowl first and mix them together and then pour over the chicken breasts)
Cover and cook on Low 6 to 8 hrs ( or High 3- 4 hrs )
Discard bay leaf.
Serve chicken pieces with sauce over buttered spaghetti

Be sure to read the directions for cooking with your clay pot.....you have to soak it for a while and start it in a cold oven, if I remember correctly. Will look in my clay cooker cookbook and see if there is a recipe for cooking pork chops.

Pork chops are not a good choice for clay pot cookery. they don't do well with long slow cooking. Over cooked lean pork gets stringy and tough.
Therea re many other things that you can cook however.
Tehre are lots of recipes in the link posted.

You can do this easily-Pork Chops and Sauerkraut
2lb sauerkraut, drained
2c applesauce
2Tbrown sugar
1/4c dry white wine
1/2T Dijon ustard
1/4 tsp pepper
6 pork chops...1 inch thick
2T butter
2T veg oil
Soak topa and bottom of clay cooker in water for 15 minutes. In a bowl mix together sauerkraut, applesauce, brown sugar, wine, mustard and pepper. Place mixture in cooker. In a skillet, brown pork chops in butter and oil.Transfer chops to top of sauerkraut mix. Cover with lid and place in cold oven. Set oven to 400° and bake for about 1 hour or til chops are tender.
Serve with mashed potatoes and a green veggie.

An old fashioned meal: Rice and Pork Casserole
1c uncooked rice
1pk onion soup mix
4 large pork loin chops
pepper to taste
1 can cream of mushroom soup
2 1/2c water
Soak top and bottom of cooker for at least 15 min. Place rice in bottom of cooker and sprinkle with onion soup mix.
Cut excess fat from chops and sprinkle with pepper.
Place on top of rice. Mix mushroom soup with water and pour over all.Cover, place in cold oven and set oven at 400°. Bake for 1 1/2 hours or til chops are tender

thanks so much for all the great recipes. I ended up just taking a crockpot recipe with less liquid and it was delicious. I have a glazed clay cooker, so I soaked the lid only as directed on the mfg site, and started from a cold oven. I will save the recipes above and try them as well - again thanks!
