RECIPE: Lemon Maple Pie

I was going through some files and found a long, lost recipe from a friend, Jack L. Eaton, for Lemon Maple Pie. He was quite proud of it, it was his Grandmother's and he adapted the original recipe to a 9" pie.

Original Recipe:

1 lemon, juice and grated zest

1 egg

1/4 c. sugar

1 c. maple syrup

1 TBL flour

Bake in 2 crust, 8" pie plate for 50 minutes at 350 degrees.

9" Pie variation:

2 medium lemons or 1 large and 1 small

2 eggs

1/2 c. sugar

2 c. maple syrup

3 TBL flour

Bake 60 minutes at 350 degrees

Two of my favorite flavors! Might even have to try with lime.

I assume the adapted recipe is also a 2 crust version?
