LOOKING for: cranberry quick bread

Hi Everyone, This is my fist post on the GW "home" Page.I have been a lurking for sometime. What a great site.

I picked up a package of Concord Cranberry Bread Mix for Thanksgiving. I enjoyed every bit of it but I would like to make my own. Does anyone have a great recipe for a quick Canberry bread?

This is my favorite (and only!) cranberry bread. I use the orange flavored Craisins. I don't put nuts in it. It is delicious. Ann

Cranberry Orange Bread

1 egg
1 cup sugar
2 Tbsps melted butter
1-1/4 cups orange juice
1 Tbsp orange zest
2 tsps baking powder
1 tsp. salt
½ tsp. baking soda
3 cups flour
8 oz or more Craisins or Orange flavored Craisins
Nuts  optional

Mix ingredients and pour into greased & floured loaf pan.

Bake at 350 degrees for 50 minutes or until center of loaf is done.

I have a cranberry quick bread that is very VERY labor intensive. Calls for cutting a cup up cranberries in half....and I've triedw ithout doint that and they explode and make pockets in the cake and I have tride coarsly chopping them and that doesn't work well either...
AND it calls for a fair amount of grated orange peel.
Delicious but a pain....not even going to post that one!

But this also makes a single loaf, not as tidy looking as the other, but lots easier. cook a loaf about 40 minutes.

Best Cranberry Muffins
1/4 cup butter (melted)
1 1/2 cups flour
2 t. baking powder
1/2 t. salt
1/2 cup sugar
1 large egg
1/2 cup milk
1 cup chopped cranberries
2 TB cinnamon-sugar
Cool melted butter. Stir dry ingredients together in a bowl. In another bowl, beat egg and milk, then add in cooled butter.
Add wet ingredients to dry. Stir quickly to moisten. Add cranberries. Fill muffin cups half full and sprinkle tops of batter with the cinnamon sugar.
Bake in a preheated 375 degree oven for 20-25 minutes.

This is my sister's recipe and very good.
Cranberry Bread
2 1/4c flour
1c sugar
1tsp baking soda
1/4tsp salt
1 1/2c fresh cranberries, chopped
1c chopped pitted dates
1c chopped nuts
2 beaten eggs
1c buttermilk
3/4c veg oil
1 tsp orange rind
Sift dry ingredients together and then combine all ingredients. Pour into a 9x5" greased loaf pan and bake in a preheated oven at 350° for 55 minutes or til tests done
Cook together til sugar dissolves
1/2c orange juice
3/4c sugar
Cool slightly and pour over bread.
