RECIPE: Thanksgiving Winner! Cranberry Salad
The biggest surprise was a delicious cranberry salad with mini marshmallows!!!
I'd never give this recipe a 2nd glance but now that I've tasted it . . . . more please.
Robin's Grandmother's Overnight Cranberry Salad
12 oz. cranberries (orig. 16 oz.)
2 red tart apples (or granny smith)
2/3 c. crushed pineapple
(she was out and substituted 15 oz.can mandarin oranges, well drained)
3/4 c. sugar (orig. 1 1/2 c.)
10 oz. mini marshmallows
Grind (or pulse) cranberries & apples; stir in crushed pineapple (or mandarins).
Stir in sugar & marshmallows; stir every hour at room temp. to help dissolve sugar.
Age overnight in fridge.
Next day fold in 1 c. cool whip or whipped cream (an hour before serving is fine).
Serve on lettuce leaf.
