RECIPE: Acorn Squash Stuffed
If my mother had made acorn squash like this I may have grown up appreciating it.
It's attractive too.
Stuffed Acorn Squash
1 acorn squash, cut in half lengthwise
1 med. tart apple. peeled & chopped
1/4 C. chopped celery
2 Tbsp. raisins
1 Tbsp. brown sugar
1/4 tsp. pumpkin pie spice
Microwave squash halves, cut side down, for 4-6 min. or til tender.
Combine remaining ingredients and place in center of squash.
Cover & microwave 3-4 min. Allow to stand 3 min. Serve.
