RECIPE: red lentil soup
my favourite quick and easy winter soup! it's ready in less than no time.
3 tbsp olive oil
1 onion finely diced
2 carrots grated
1 cup red lentils
4 cups vegie stock
add 2 potatoes peeled and diced and 1 cup cubed eggplant if desired
heat the olive oil, onions, eggplant and curry powder over medium heat until onion softens. add the carrots, potatoes, washed lentils and stock. bring to the boil and the simmer for 15 minutes or until the lentils dissolve.
