Since they are in season and at there best, here is a link to 10 great ideas for what to do with those lovely tomatoes you're harvesting now (or buying at the Farmers market)

Top 5 ways I use my (extra) tomatoes, so I have that fresh tomato taste all year long.

1--Can them--they can be used as a vegetable or in cooking

2--Make tomato juice--fresh tomato taste--better than any you will buy

3---Freeze them--no peeling required and they are great for soups and stews or any cooked dish.

4---Make chili sauce and seal in jars.

5---Make spaghetti sauce and freeze

Oh, and don't forget


4 slices French bread, sliced ½ inch thick
2 tomatoes, finely diced
2 cloves garlic, either finely chopped or minced
2 tablespoons olive oil, first pressed virgin
2 tablespoons fresh basil, can be either finely chopped or chiffonade
1 tablespoon fresh chives, either onion or garlic, finely chopped
1 teaspoon fresh oregano finely chopped
Freshly ground pepper and kosher salt to taste
Parmesan cheese

Combine all ingredients except bread in a small bowl and chill.

Brush bread with olive oil on one side; grill oiled side down until golden brown; then turn and continue to grill oiled side of bread.

Place oiled side of bread down on a serving plate and top with the remaining ingredients. Top with Parmesan cheese. Can garnish with whole fresh basil leaves.
