LOOKING for: whats the difference?

I just got a new-to-me bread machine. The recipe book (downloaded from the internet) calls for "bread flour". What is the difference between this and regular all purpose flour?

And who has fabulous recipes for the breadmaker???

I think the bread flour has more gluten. I use All purpose most of the time when a recipe calls for bread flour. I use my machine at least twice a week. I'm already on my second today for sweet rolls and now for dinner rolls for Easter. I seldom bake bread in it, I use the dough cycle which take 130 minutes. Then, I mold whatever I'm making, let it rise and then bake.

Shirley's correct. Bread flour has a higher gluton content than AP flour, it will make for a finer mesh and higher rise to the loaf.

Here's a recipe for a wheat bread that I got with my first breadmaker. It makes an excellent loaf and uses 1/2 white flour and 1/2 whole wheat flour. The addition of the white flour adds additional gluton and makes a better loaf. The brown sugar makes a real good taste to the loaf. It's one of my favorites.

Whole Wheat Bread

1. Place All Ingredients In Pot, In Order listed.
2. Let Stand For 5 Minutes.
3. Use Bread Setting. Done In 3 Hours.

If you want a loaf with the characteristics of a bread flour loaf, add a couple of tablespoons of vital wheat gluten to your dough.
Adds more protein and makes for a higher rise.

Here's another recipe for your ABM. It's a clone of the Cinnabon Cinnamon Rolls with the dough made in your bread machine. I make 8-10 dozen of these every Christmas to give to neighbors. They're great.

Cinnabon Cinnamon Rolls - Abm

Amount Measure Ingredient -- Preparation Method

ROLLS
1/4 Cup Butter -- Melted
1/4 Cup Water
1/2 Box Instant Vanilla Pudding -- 3.4 oz box
1 Cup Milk
1 Large Egg -- Beaten
1 Tbsp Sugar
1/2 tsp Salt
4 Cups Bread Flour
2 1/2 tsp Yeast
FILLING
1/2 Cup Butter -- Softened
1 Cup Brown Sugar
1 tsp Cinnamon
FROSTING
4 oz Cream Cheese -- Softened
1/4 Cup Butter -- Softened
1 1/2 Cups Confectioners Sugar
1/2 tsp Vanilla
1 1/2 tsp Milk

Rolls:
1. Place ingredients in machine following the specifications of that particular machine. Set for dough cycle.
2. After complete on dough cycle, remove from machine, divide in 1/2 and roll each piece out to 17x10" (approx.) rectangle.

Filling:
3. Mix together brown sugar and cinnamon. Spread softened butter over dough. Sprinkle brown sugar and cinnamon mixture over top. Roll tightly from long end, pinching edges closed when completely rolled.
4. Slice rolled dough into 1/2" slices (or larger if a larger bun is preferred). Place into greased cake pans or a cookie sheet. If using cake pans, use 3 x 9" pans. Let rise until doubled (about one hour). Makes 8 Extra Large 0r 12 regular buns in a 1.5" x 8.5" cake pan.
5 .Bake at 350 for 15-20 minutes, until golden. Do not overbake.

Frosting:
6. Spread on very warm rolls. They are best when eaten fresh, but 10-15 seconds in the microwave rejuvenates them. (If baking extra large buns, the icing will cover 2 batches of rolls).

These are my 2 favorites that a friend makes.

Basic White/French - bread machine Ultimate

1 1/2 c. warm water
2 Tbsp. oil
1 1/2 tsp. salt
4 c. flour
2 1/2 tsp. active dry yeast

Place in machine in order given.

Cinnamon Raisin Whole Wheat - bread machine Ultimate
2 lb. loaf

1 1/4 c. water (use 1 1/2 c.)
1 egg
1 1/2 Tbsp. oil
1 tsp. salt
3 1/2 c. whole wheat flour
1/4 c. dry milk
3 Tbsp. sugar
1/2 c. each raisins & walnuts
2 tsp. cinnamon
1 tsp. vanilla
1 tsp. active dry yeast

Put in machine in order given.

(the water is increased because orig. recipe
called for half all-purp flour)
