RECIPE: Orange Chocolate Bread Pudding

This is from a little BH & G cookbook--" Low Calorie -- 65 Get Slim Recipes " :

Orange Chocolate Bread Pudding

Nonstick cooking spray

1 c. firm-textured whole wheat bread cubes

1/3 c. fat free milk

2 Tbsp sugar

2 Tbsp miniature semisweet choc chips

# tbsp refrigerated or frozen egg product, thawed or 1 egg

1/2 tsp finely shredded orange or tangerine peel

1/4 tsp vanilla

Frozen light whipped dessert topping , thawed

Preheat oven to 350 , lightly coat 2 -1/2 c. size baking dishes or 6 oz. custard cups with cooking spray. Fill with bread cubes

In a small sauce pan, combine sugar, milk & chips. Cook & stir over low heat until chocolate is melted, remove from heat & beat smooth with whisk.

Pour egg product into a small bowl, slowly stir in chocolate mixture. Stir in vanilla & orange peel. Pour egg mixture over cubes--press bread with back of spoon to moisten completely.( If desired cover & chill for up to 2 hrs: uncover before baking)

Bake 15-20 minor until tops appear firm& knife inserted near center comes out clean.

Serves 2

per serving: 170 calories, 4 g total fat ( 2g. sat fat ), 1 mgm chol, 143 mgm Na, 26 g carbo, 2 g fiber, 5 g protein.

* I used Whole Wheat 7 grain & seed bread with currants, evaporated skim milk , eggbeater , reg sized chocolate chips, doubled the amount of orange zest instead of peel -- and made 1 1/2 times the recipe . Also used micro instead of stove top for melting choc/milk mixture.

Fast & simple to put together-- not as custardy as most bread puddings-- think it would be just as good with 1/2 the sugar too.
