LOOKING for: Just a few brownies!

kss1956February 29, 2008

I was craving something chocolate and had a box of brownie mix. I didn't want to make the whole box because I would eat it myself in a few days! I used several tablespoons of the mix along with some oil, water and part of an egg. It worked, but I would like to know if anybody has done the same thing and if so, is an egg necessary and what amounts did you use of each ingredient. I always have baking cocoa on hand-does anyone have a recipe using this to make a few servings of something chocolaty when craving this? Thanks! Karen

You might want to check out this book -- has tons and tons of small batch recipes (for just a few cookies, a few brownies, a few cupcakes) for when you don't want to make a whole batch.

Here is a link that might be useful: Small Batch Baking Book

For efficiency, you can bake a large batch and freeze the extra. Or freeze cookie dough. It only takes 20 minutes or so to thaw enough to scoop some out.
