RECIPE: South Sea Ribs

My 74 year old aunt gave me some of her recipes (handwritten and cookbooks). This is one of her handwritten recipes. Sounds interesting! (In her early years, she took a Chinese cooking course. I'm not sure if that's where this recipe originated.)

South Sea Ribs

4 lbs pork ribs

½ cup vinegar

1 cup cornstarch

¼ cup dark molasses

¼ cup soya sauce


½ cup sugar

¾ cup vinegar

¾ cup water

¾ cup pineapple syrup

1½ green pepper, cut in thick strips

3 cups pineapple chunks, drained

Cut ribs in small pieces. Bring 2 quarts of water to a boil, add ½ cup vinegar and the ribs. Cover and bring to boiling. Uncover and simmer 15 minutes. Drain and cool.

Mix together cornstarch, molasses, and soya sauce. Add ribs and coat each piece.

Fry ribs in deep hot fat (375 degrees) until brown. Set aside until ready to glaze.


Combine sugar, vinegar, water, and pineapple syrup. Bring to a boil.

Add ribs, cover and simmer 30 minutes, or until meat is glazed and tender. Add green pepper strips and pineapple for the last 10 minutes of cooking.

Serves 4-5.

At the risk of offending anyone. I am of the opinion that it is a mortal sin to boil ribs. I know people swear by it but, at least slow bake them covered, if you must. Never, ever boil. The frying seems pretty unique, as well.
