RECIPE: South Sea Ribs
My 74 year old aunt gave me some of her recipes (handwritten and cookbooks). This is one of her handwritten recipes. Sounds interesting! (In her early years, she took a Chinese cooking course. I'm not sure if that's where this recipe originated.)
South Sea Ribs
4 lbs pork ribs
Â½ cup vinegar
1 cup cornstarch
Â¼ cup dark molasses
Â¼ cup soya sauce
Â½ cup sugar
Â¾ cup vinegar
Â¾ cup water
Â¾ cup pineapple syrup
1Â½ green pepper, cut in thick strips
3 cups pineapple chunks, drained
Cut ribs in small pieces. Bring 2 quarts of water to a boil, add Â½ cup vinegar and the ribs. Cover and bring to boiling. Uncover and simmer 15 minutes. Drain and cool.
Mix together cornstarch, molasses, and soya sauce. Add ribs and coat each piece.
Fry ribs in deep hot fat (375 degrees) until brown. Set aside until ready to glaze.
Combine sugar, vinegar, water, and pineapple syrup. Bring to a boil.
Add ribs, cover and simmer 30 minutes, or until meat is glazed and tender. Add green pepper strips and pineapple for the last 10 minutes of cooking.
