My Pastitsio recipe calls for a good bit of Kefalotiri cheese. No luck finding any here (or near). Can anyone suggest a good substitute?
I make my Pastitsio with grated Kraft parmesan cheese and it is just fine my kids love it.
Romano will work also.
Kefalotiri is hard goat cheese from Greece. The closest to it is Pecorino Romano which is a Romano but one made from sheep's milk as opposed to cow's milk.
Kefalotori is a quality cheese so with distinctive flavour. I would try for Pecorino Romano (Loctelli is an excellent brand) first, if you can't find it use a good Parmesan or a cow's milk Romano.
I make Pastitsio often and I use Locatelli and its just fine....as a matter of fact I sent a tray to Johns construstion site 2 weeks ago and his Greek friend loved it and the following week his Grandma sent me some of hers in a tupperware bowl!
I usually use a good parmesan cheese for pastitso.
